The Scorpion Beef Bomb
INGREDIENTS
1 skirt steak
Bacon Weave
2-3 packs of bacon
Hardcore Carnivore Charcoal Rub
Deez Nuts Rub
Filling
2 lobsters
Small bunch of parsley
1/2-1 jalapeño
3-4T chopped bacon
1 cream cheese packet (8oz)
Juice of 1/2 a lemon
Assembly
1 egg
1 lobster (with shell)
1 cranberry
COOKING INSTRUCTIONS
Serves 4-6
Quick sear on skirt steak using grill or torch (optional step and don’t cook through).
Steam / boil the 3 lobsters for 10-12 min.
Make your Filling: De-shell 2 of the lobsters and cut into small pieces. Chop parsley and jalapeño. Combine with cream cheese and lemon.
Place a generous layer of filling on the skirt steak, roll tightly with the filling spirals facing out left and right.
Make your Bacon Weave: Separate bacon into two equal amounts. Put Deez Nuts rub on one half and Hardcore Carnivore on the other pile (you can use other rubs but I chose those for their great flavor and color). Create a bacon weave (tutorial on TikTok) intertwining the black and red seasoned bacon.
Wrap bacon weave around the rolled skirt steak.
Smoke at 225-275 until outside is crispy and internal temp of 135 on beef (about an hr). Oven also works.
Assembly: With about 20 minutes to go put your egg on the smoker (hard boiled is the goal this will become your scorpions eyes).
Take everything off the smoker.
Assembly: Decorate with your 3rd lobster (tail and claws), cross sections of the hardboiled egg (eyes) and sliced cranberries (pupils).
