Lobster Bisque and Lobster Grilled Cheese

INGREDIENTS

Lobster Bisque

  • 3 lobster tails or ~2 full lobsters

  • 2 shallots chopped

  • 1/2 small onion

  • 4 cloves garlic

  • 3T flour

  • 1/4 cup white wine

  • 1/2t hot sauce

  • 1t thyme

  • 1/3 cup chicken broth

  • 1t tomato paste

  • 1t paprika

  • 1 1/2 cups reserved water from lobster broth

  • 1 cup full fat coconut milk (or creme)


Grilled Cheese

  • 2 Slices of Italian bread

  • 1-2 cups of your favorite cheeses I used parmesan and mozzarella

  • 1T butter


Optional

  • Fresh coconut


COOKING INSTRUCTIONS

Serves 2-3

  1. Make the Lobster Bisque: Cook shallots and onions on medium heat in olive oil for 5 min until tender, add garlic and cook another 1-2 min. Add flour, stir and cook for 2 min. Slowly add wine, mixing to combine as you do. Add hot sauce and salt, when a smooth texture. Cook for another min or two until it has turned into a thick paste. Slowly add in chicken broth, deglazing any bits on pan. Add paprika, tomato paste and lobster base, stir and simmer for 10 min or so .

  2. Blend mixture, should be smooth at this point. Return to pan, add coconut milk and lobster chunks (save some lobster for the grilled cheese)

  3. Make the Grilled Cheese: Butter 2 slices of Italian bread. Add cheese such as Parmesan & mozzarella to one side. Top with chunks of lobster, more cheese, and second slice of bread. Cook on medium low heat.

  4. Flip after several minutes, bottom side should be golden brown. Cook another several minutes, remove and enjoy!

  5. Optional: Crack open a fresh coconut, keep water for a refreshing drink and use the coconut to hold the bisque.
